காரட் சாலட்

தேவையான பொருட்கள்  காரட் - 4 (தோல் சீவி துருவி வைக்கவும்)
பாசிப்பருப்பு - 1 / 4 கப் (1 /2 மணி நேரம்  ஊற வைக்கவும்)
உப்பு தேவையான அளவு
பச்சை மிளகாய் - 2 (கீறிக் கொள்ளவும்) 
கொத்துமல்லி தழை - 1 /4 கப் (பொடியாக நறுக்கியது)
கறிவேப்பிலை - சிறிதளவு
எலுமிச்சம் பழம் - 1  (சாறு எடுத்து வைக்கவும்)
எண்ணை - 1 தே க 
கடுகு சிறிதளவு
உடைத்த உளுத்தம் பருப்பு - சிறிதளவு 
பெருங்காய் தூள் - சிறிதளவு 

செய்முறை:
ஒரு அகலமான பாத்திரத்தில், துருவிய காரட், ஊறவைத்த பாசிப்பருப்பு, உப்பு, கொத்துமல்லி தழை, கறிவேப்பிலை எல்லாம் சேர்த்து நன்கு கலக்கவும். 


தாளிக்கும் கரண்டியில் எண்ணையை சூடு பண்ணவும், சூடானதும், கடுகு, உளுத்தம் பருப்பு, பச்சை மிளகாய், பெருங்காய தூள் சேர்த்து காரட்டின் மீது தாளிக்கவும்.

சுவையான சாதனா காரட் சாலட் தயார். இதை தனியாகவும் சாப்பிடலாம், தயிர் சேர்த்தும் சாப்பிடலாம். டியட்ல் இருப்பவர்களுக்கு சிறந்த உணவு. 

Russian Salad

Ingredients
Carrot                             1
Celery                             1
Potato                             1
Peas                                1/2 cup
French beans                  1/2 cup chopped
Mayonnaise                    1/2 cup
Coriander leaves             1/2 cup chopped
Tomato                           1 chopped
Cucumber                       1 chopped
Capsicum                        1 chopped
Paneer                             100 gms cubed
 
Method
Boil the carrot, potato, peas and French beans.
Peel the potato and  chop.
 Mix the vegetables, paneer and celery with the mayonnaise.
Serve.

Raw Mango Salad

Ingredients:
Green Raw Mango - 1 no
Red Chilly Powder - 1/4 tsp
Green Chilli cut - 1
Onion - 1/2
Turmeric powder - 1 pinch
Salt to taste

Method:
Wash, peel and cut the raw mangoes into small cubes. Cut the onions into thin and small pieces. Mix red chilli powder and turmeric powder and mix well to the cut mangoes. Add the cut onions and coriander leaves and salt just before serving. This will leave the onion crisp. Adding salt just before serving will help in avoiding water oozing out from mango.

This way the salad will be very crisp. If the mango is sour add a pinch of sugar to it.

Fruit Chaat

Ingredients:
Banana - 2 nos
Orange - 1 no
Apple - 1 no
Pineapple - 1/2 no
Guava - 1 no
Tomato - 1 Firm and Ripe
Potatoes - 2 nos
Chaat Masala - 1 tsp
Lime - 1 no
Salt to taste
Pepper powder - 1/2 tsp (can increase if needed)

Method:
Pressure cook potatoes. Peel and dice it into big cubes. Wash and cut apple, pineapple, guava and tomato to medium sized cubes. Peel oranges and banana and cut the bananas into reasonable sized rounds. Cut the orange slices into 2. Put all the fruits and potatoes in a mixing bowl. Add salt, pepper powder and chat masala powder and mix well. Squeeze lime juice and mix again. Serve chilled.

Radish Salad

Ingredients:
Radish white - 1 no
Green chilly - 1 no
Ginger - 1/2 inch
Lemon - 1 no.
Grated coconut - 1/2 cup
Salt to taste

Method:
Grate radish. Cut ginger to thin stripes. Mince green chilly finely. Take juice from the lemon.

Mix all the ingredients together and toss it. Serve it as side dish for any kind of rice dish.

Methi Salad

Ingredients:
Methi seeds - 1 cup
Green moong dal - 1 cup
Corn - 1 cup
Curd - 1 1/2 cups
salt to taste
Cucumber - 2 nos
Carrots - 2 nos
Green chilly - 2 nos
Oil - 1/2 tbsp
Mustard seeds - 1/2 tsp

Method:
    Soak methi seeds, moong dal, corn and make sprouts out of them. (It will take almost  a day to make all the sprouts or get the readily available ones from the market). Grate carrot and cucumber. Mix all the sprouted seeds, carrot and cucumber and add salt to taste. Add the curd and mix well. Heat seasoning laddle and add oil to it when hot add the mustard seeds and when it splutters, add the green chillies to it after splitting it into 2. Add it to the salad.

The bitter taste of methi seeds will be gone after it is sprouted. This makes a great summer cooler. Can be had as a meal by itself for those diet watchers.

Tips to make colourful salads

Add baby carrots, red cabbage, spinach and other seasonal vegetables available to add colour to the salads.

Pineapple Paneer Salad

Ingredients:
Pinapple pieces - 1 cup
Paneer cubes - 1 cup
Chaat Masala - 1/2 tsp
Jeera powder - 1/2 tsp
Salt to taste
Olive Oil - 2 tbsp
Coriander leaves - 1/4 cup
Mint leaves - 1/4 cup

Method:
Chop coriander and mint leaves finely. In a salad bowl add paneer and pine apple pieces, chaat masala, Jeera powder, salt, coriander leaves and mint leaves and olive oil. Toss them and mix them well. Refrigerate it and serve chilled.

This salad helps in removing gastric trouble, constipation etc which occours in summer season.

Paneer Spinach Salad

Ingredients:
Paneer - 1/2 cup (finely diced)
Spinach - 3 cups (finely chopped)
Tomato - 1/4 cup (finely diced)
Green chilly - 1 to 2 nos
Lime Juice - 1 tsp
oil - 2 tbsp
Salt to taste

Method:
In a pan add 1/2 sp of oil and add the spinach. Sprinkle it with a pinch of salt and saute well. Remove it from the pan.

Add the remaining oil and when hot add green chilly and the paneer cubes to it. When the paneer cubes becomes a bit golden brown in colour mix it with the spinach. Add chopped tomatoes and lime juice and mix well.

Serve chilled.

Corn Paneer Salad

Salad's are always a favourite in our house. I had few Paneer cubes and Sweet Corn left. Wanted to make use of it and make a healthy evening snack and here comes the dish.

Ingredients:
Corn - 2 cups
Paneer - 100 gms (1 cup)
Green Chilly - 1 no
Chat Masala (optional) - 1 tsp
Salt to taste
Coriander leaves - 1/4 cup
Lemon Juice - 1 tbsp (juice from 1/2 lemon)

Method:
Pressure cook corn. Let it cool and drain. Cur Paneer into cubes. Boil water and add 1/2 tsp of salt in it. Add the paneer cubes in it. Drain the water. Grate green chillies. Mix corn, paneer cubes and grated chilly. Add salt and chat masala and mix well. Chop coriander finely and add it to the mixture. Add lemon juice and serve. 

Cucumber Carrot Salad

Ingredients
Carrot - 2 nos
Cucumber - 1 no
Pepper Powder - 1 tsp
Salt to taste
Lemon Juice - 1 tbsp
Green Chilly - 1 (slit into half vertically)
Oil - 1 tbsp
Mustard seeds - 1/2 tbsp
Coriander Leaves - 1/2 cup finely chopped

Method:
Grate carrots and cucumber. Sprinkle salt and black pepper powder. Toss well to get everything mixed together.

In a tempering ladle add oil and when hot add mustard seeds when it splutters add green chilly. Pour this on to the salad.

Add lemon juice.

This can be served with masala pappad too.

Recipe for a healthy salad

 Salads have become the latest fab for many. People love to eat salads as regular meals. Here is one healthy salad recipe that can be had along with rice or chappati or just as a snack during tea/coffee time.

Ingredients:
Ground nut - 1/2 cup(fired or boiled fresh groundnut)
Sprouted Moong Dal - 1 cup
Onion  - 1 big finely chopped
1 big ripe tomato - Finely chopped (can also add 2 to 4 tbspns of Tomato Puree)
Green Chilly - 1 medium sized
Ginger - 1 inch piece (grated or finely chopped)
Lemon Juice - 1 tbsp
Salt - to taste
 
For seasoning:
Oil - 1 tsp
Mustard - 1 tsp
Urad Dal - 2 tbsp
Curry Leaves - a few
Coriander Leaves - a few (finely chopped)

Method:
        In a salad bowl, add groundnut, moongdal, onion, tomato (or puree), ginger, green chilly and the lysalt. In a frying pan add oil and add the mustard seeds and when it splutters add it to the groundnut mixture. Mix thoroughly. Add the lemon juice to it.
        This salad can also be decorated with finely chopped coriander leaves.

Recipe for Kosumalli / Kosambari

This is a dish which is my all time favourite. When ever I feel like eating Salad, I just prepare this and eat it and it is really yummy. I make the simplest version of the below given recipe. I dont add carrots, or grated coconut when I want to make it in a jiffy.

Ingredients:
1 small cup Moong dal - soak in water for 1/2 an hour and drain the water and completely
1 medium size cucumber (check whether it is not bitter)
1 carrot - grated
2 - 4 green chilly - finely chopped
1 sp lemon juice or grated or finely chopped mango
Grated coconut - 1/4 cup
1/2 sp mustard seeds
1 sp oil
Salt

Method:
In a bowl take the drained moong dal and add the carrot, cucumber, green chilly and salt and mix well. If you are adding mango leave the lemon juice. Add the mango along with the carrot and cucumber. In a pan add oil and add the mustard seeds. When it is ready pour it on the mixture. After mixing it well, add the grated coconut.

If you are adding lemon juice add it after you do the seasoning and not before that.

If you are so concerned about your health, avoid the grated coconut.
