Pineapple Melody

Ingredient
Pineapplejuice - 200 ml 
Pineapple crush - 2 tbsp
Mint leaves - 4-5 nos 
Crushed ice - as required
Lime juice - 2 tbsp
Sugar syrup - 2 tbsp
Chaat masala - 1 tsp

Method:
In a tall stemmed glass, place a bed of the crushed ice. 
Pour over the blended mix of the pineapple juice, Pineapple crush, mint, lime and sugar syrup, and chaatmasala.
Serve it chilled.

Pineapple rasam a recipe to tickle to taste buds of all

Ingredients:
Tomatoes - 4 nos
Green Chillies - 3 nos
Ginger - 1 inch piece
Thuvar dal - 1/4 cup
Rasam Powder - 1 1/2 tbsp
Asafodeita - 1/2 tsp
Tamarind paste - 1 tsp
Salt to taste
Turmeric powder - 1 pinch
Curry leaves - 1/4 cup
Coriander leaves - 1/2 cup
Ghee - 1 tbsp
Mustard seeds - 1/2 tsp
Jeera - 1 tsp
Pineapple - 1/2 (medium sized)
Sugar - 1/2 tsp

Method:
Chop of of the pineapple, add sugar, 1/2 cup of water and pressure cook it for about 1 or 2 whistles. Remove and mash and drain to get pineapple syrup. Cut the remaining pineapple into small pieces.

Pressure cook Thuvar Dal and mash it finely. Add 1 1/2 cups of water and keep it ready.

Add 1 cup of water to tamarind paste. Chop tomato finely, ginger pieces, 1/2 of the curry leaves and 1/4 cup coriander leaves and add it along with pineapple pieces and boil it in 1 cup of water. Blend it using a juicer blender.

Add the extract to tamarind juice along with slit green chillies, rasam powder, salt, turmeric powder and asafodeita. When it comes to a boil add the mashed Thuvar dal and let it bubble.

Remove from flame. Add 1 tsp of pineapple syrup. Decorate it with finely chopped pineapple pieces, chopped curryleaves and coriander leaves.

In a seasoning pan add ghee and when hot add mustard seeds and when it splutters add Jeera and one pinch of hing and add it to the rasam.

Pineapple Paneer Salad

Ingredients:
Pinapple pieces - 1 cup
Paneer cubes - 1 cup
Chaat Masala - 1/2 tsp
Jeera powder - 1/2 tsp
Salt to taste
Olive Oil - 2 tbsp
Coriander leaves - 1/4 cup
Mint leaves - 1/4 cup

Method:
Chop coriander and mint leaves finely. In a salad bowl add paneer and pine apple pieces, chaat masala, Jeera powder, salt, coriander leaves and mint leaves and olive oil. Toss them and mix them well. Refrigerate it and serve chilled.

This salad helps in removing gastric trouble, constipation etc which occours in summer season.

Recipe to make Apple Burfi

Apple is one fruit that almost all like the most. Just like the way we make Mango Halwa we can make burfi out of Apples.

Ingredients:
Apple - 2 to 3 nos (depending upon the size)
Pineapple - 1 no
Sugar - 3 cups
Ghee - 1/4 cup

Method:
       Make a fine pulp out of apple which should be equal to 1 cup. Make pulp out of pineapple equal to 1/2 cup. Add these two pulps along with sugar to a hard bottom pan. Keep stirring in moderate heat till the pulp getts thicker. When thick add ghee little by little till the pulp starts coming out of the sides of the pan. Pour the mixture to a ghee smeared plate. When cold cut into pieces.

Note: Can be decorated with pista pieces. And if it is been served for a party then can be decorated with finely chopped pieces of apple and pineapple too.
