Orange Carrot Moctail

Ingredients:

  • 2 Oranges (Nagpur variety) OR 4 Mosambis
  • 4 Carrots
  • 1/4 cup Lime juice
  • 1/2 tsp Salt
  • 1 tbsp Honey
  • 1/8th cup Mint leaves
  • 1 Lemon slice
  • Ice cubes

Method:

  1. Grind the carrots to make juice, yielding approximately 200 ml.
  2. Juice the oranges (or mosambis) to obtain approximately 200 ml of juice. Alternatively, use store-bought orange juice.
  3. In a tall glass, add 3 to 4 ice cubes.
  4. Pour 100 ml of carrot juice and 100 ml of orange (or mosambi) juice into the glass.
  5. Add honey and lime juice to the mixture, and stir well to combine.
  6. Garnish the mocktail with mint leaves and add a slice of lemon to the rim of the glass for decoration.
  7. Serve the refreshing Orange Carrot Mocktail as a party starter, a healthy summer cooler, or as an after-school drink for kids.

தேவையான பொருட்கள்  காரட் - 4 (தோல் சீவி துருவி வைக்கவும்)
பாசிப்பருப்பு - 1 / 4 கப் (1 /2 மணி நேரம்  ஊற வைக்கவும்)
உப்பு தேவையான அளவு
பச்சை மிளகாய் - 2 (கீறிக் கொள்ளவும்) 
கொத்துமல்லி தழை - 1 /4 கப் (பொடியாக நறுக்கியது)
கறிவேப்பிலை - சிறிதளவு
எலுமிச்சம் பழம் - 1  (சாறு எடுத்து வைக்கவும்)
எண்ணை - 1 தே க 
கடுகு சிறிதளவு
உடைத்த உளுத்தம் பருப்பு - சிறிதளவு 
பெருங்காய் தூள் - சிறிதளவு 

செய்முறை:
ஒரு அகலமான பாத்திரத்தில், துருவிய காரட், ஊறவைத்த பாசிப்பருப்பு, உப்பு, கொத்துமல்லி தழை, கறிவேப்பிலை எல்லாம் சேர்த்து நன்கு கலக்கவும். 


தாளிக்கும் கரண்டியில் எண்ணையை சூடு பண்ணவும், சூடானதும், கடுகு, உளுத்தம் பருப்பு, பச்சை மிளகாய், பெருங்காய தூள் சேர்த்து காரட்டின் மீது தாளிக்கவும்.

சுவையான சாதனா காரட் சாலட் தயார். இதை தனியாகவும் சாப்பிடலாம், தயிர் சேர்த்தும் சாப்பிடலாம். டியட்ல் இருப்பவர்களுக்கு சிறந்த உணவு. 

Carrot Halwa or Gajar ka Halwa

The traditional method of making carrot Halwa is to grate it and add with Khova or milkmaid. But tried a new method today. It did turn out to be yummy and delicious.

Ingredients:

Carrot - 1 Kg
Sugar - 1 cup
Milk - 1/2 litre
Cashew Nuts - 8 to 12 nos
Ghee - 1/4 cup

Method:
Steam the carrots in pressure cooker and grind them to a fine paste. Break the cashew nuts and fry in a tbsp of ghee.

Boil the milk and reduce it to 3/4th of the original quantity. Add the ground paste and mix well with the milk. (Do not cover the vessel, as the mixture will definitely overflow, even if you keep in medium flame). When the mixture thickens add the sugar (this will make the mixture a little watery). Keep stirring so that it does not stick to the bottom of the pan. Add ghee little by little and keep stirring. The mixture have to thicken and should not stick to the sides of the pan. Add the fried cashew nuts and stir for a few more mins. Remove from flame and let it cool. Store in an airtight container. 

Carrot Milk - A tasty evening drink recipe

Carrots in any form is favourite to all in our house hold. This drink made of orangy orange carrots made a fulfilling evening drink for the day.

Ingredients:
Carrots - 2 nos
Skimmed Milk - 1 1/2 litres
Sugar - 1/4 cup
Cardamom Powder - 1/2 tsp
Saffron - few strands
Cashew nuts - 6 nos
Almonds - 6 nos
Clove - 1 no
Cinnamon sticks - 1 inch piece

Method:
Peel the carrots and cut them into big pieces. Soak the almonds in warm water and peel the skin. Soak them along with cashew nuts in warm milk for about 15 mins.

Pressure cook the carrots and grind them along with cashewnuts and almonds to a fine paste. Boil the milk and let it reduce to 3/4th. Add clove and cinnamon stick to the milk. Add sugar and stir constantly till it completely dissolves. Add the ground paste and cardamom powder and mix well. Remove the clove and cinnamon stick from the milk.

Garnish the milk with roasted almonds and cashew nuts. Serve hot or chilled according to one's taste.

Carrot Sambar for idly and dosa


Vareity is the spice of life. Not only kids even adults want different kind of side dish for the regular idly and dosas. Here is one such dish that have a different taste and aroma. Though the cooking method of this is similar to Sambar, this will not be that good to mix with rice and eat.

Ingredients:
Carrot - 2 nos
Shallowts or Small Onion - 8 nos
Tomato - 1 nos
Coriander seeds - 1 spoon
Broken fried bengal gram dal - 2 spoons
Coconut - 6 spoons grated.
Tamarind paste - 1 tsp
Masoor dal or Moong Dal or Thoor Dal - 1/2 cup
Salt to taste
Methi seeds - 1/2 spoon
Curry leaves a few
Coriander leaves a few
Red Chilly - 2 nos
Green Chilly - 1 no

Method:
Pressure cook the dal and mash it thoroughly. Cut carrot in round shape and pressure cook it too separately.

Grind Coriander seeds, Broken Fried Bengal Gram dal and coconut to a fine paste. In a shallow bottom pan add one spoon of oil and mustard seeds. When it splutters add the methi seeds, Green chillies. Peel and cut the onions into halves add it to the pan and saute for a while. Finely chop the tomato and add it too and mix well. Now add the cooked carrot. Mix tamarind paste to 1 cup of water and add it to the pan. Bring it to a boil and when it boils add the ground paste.

Reduce the flame and bring it to a boil and when it starts bubbling add the mashed dal. If the sambar is thick add another 1 cup of water. Remove from flame and add finely chopped coriander leaves and curry leaves.

Heat oil in a seasoning laddle and add asafodeita and red chillies to it. Pour it on top of the sambar. Mix thoroughly before serving.

Serves a great side dish for idly and dosa.

Carrot Puree for kids

One of the best baby foods is Carrot Puree. It can be started as early as the kids start eating solid food.

Ingredients:
Carrot - 1 no
Ghee or Unsalted butter - 1/4 tsp

Method:
Peel the carrots, wash and cut into small cubes. Pressure cook it with about 1/4 cup of water by covering it.

Blend the carrot in a blender ensure it is not too thick or too watery. Add the butter or ghee mix well.

Ensure that this is given in the mornings or in the afternoon for easy digestion.

Recipe for Carrot Burfi

Ingredients:
Grated carrot - 2 cups
Sugar - 2 cups
Milk - 2 cups
ghee - 1/4 cup
Besan flour - 1/2 cup
Khova - 100 gms
Cardamom Powder - 2 pinches

Method:
    In a hard bottom pan, add carrot, sugar and milk and when the mixture comes to a boil add the khova and stir well. When the khova gets mixed thoroughly, add the besan flour (heat ghee in a vessel and add the besan flour to it and make it a fine paste) and when everything gets hardened up and leaves the sides of the vessel, remove from flame and spread on a ghee greased plate. Cut into pieces when cold.

Carrot Kheer

A healthy and tasty drink. Make it plain or make it as a milkshake, kids will love for sure. Drink that people of all ages can have.

Ingredients:
Carrot - 2 cups grated
Milk - 4 cups
Water - 1 cup
Sugar - 3/4 cups
Cardomom - 1/2 tsp
Cashew nuts - 24 nos.

Method:
Pressure cook carrots in one cup milk and one cup water. (Just one whistle is enough). Let it cool. Grind half of the cashew nuts with the cooked carrot to a fine paste. Bring the remaining 3 cups of milk to a boil. Add the ground paste to it and cook till the entire mixture forms a thick paste. Add sugar after reducing the flame. When the sugar dissolves remove from flame, add cardomom powder and cashew nuts roasted in ghee.

Serve chilled. (If you want it as a drink, add half cup of this kheer to half cup of milk before serving).

Recipe to make Carrot Halwa in Tamil (காரட் அல்வா)

துருவிய காரட் - இரண்டு கப்
பால் - ஒன்றரை கப்
சர்க்கரை - ஒரு கப்
வறுத்த முந்திரி - இரண்டு ஸ்பூன்
நெய் - இரண்டு ஸ்பூன்

காரட்டை பாலில் வேக வைக்கவும். அத்துடன் சர்க்கரை, நெய் சேர்த்து நன்கு கிளறவும். சுரண்டு வரும் பொழுது, முந்திரி தூவி இறக்கவும்
