Okra (Lady's Finger ) Thayir Pachidi - 5 min Recipe

Ingredients:
Okra (Lady's finger) - 8 to 12 nos (cut into thin pieces)
Oil - 1 tbsp
Mustard seeds - 1/2 tsp
Green Chillies - 1 no
Curd - 1 cup (Thick curd)
Salt to taste

Method to make Okra Pachidi:
In a pan add oil and when hot add the mustard seeds when they splutter add the Okra and green chillies. Keep sauteing till the okra's get fried.  Add salt to it so that it is evenly spread.

Beat the curd and add the fried Okra to it. Keep it in fridge till serving.

Vazhaipazha Pachidi (Banana Pachidi)

Ingredients:
Fully ripe Banana - 2 nos
Sugar - Pinch
Salt - To taste
Thich curd - 1 cup
Oil - 1 tsp
Mustard seeds - 1/4 tsp
Green Chilly  - 1 no
Curry Leaves - a few

Method:
Mash the bananas thoroughly. Add salt, sugar and mix thoroughly. Cut the green chilly into pieces. In a frying laddle, add oil and when hot add mustard. When it splutters add the green chilly. Sprinkle the curry leaves on banana and pour the tempered oil on top of it. Mix thoroughly.

Beat the curd and add 1/2 cup of water to it. Add the beaten curd to Banana. This makes a great pachadi for virunthu samayal.

Recipe for Garlic Chilly Powder

This is another powder, that can be had both as a side dish and can also be mixed in rice.


Ingredients:
Garlic - 1 whole
Coconut Grated - 1/4 cup
Red Chillies - 10 to 12 nos
Salt to taste

Method:
Fry garlic, red chilly in 1/2 tsp of oil. When cold grind all the ingredients together. Store in an airtight container in fridge.


Note: This powder can be added to hot rice along with ghee.


Curry Leaves Powder Recipe

It will be a difficult task to think of a different dish for every other day, especially when the women of the home gets sick. Here is one of the powders that can be kept ready.

Ingredients:
Curry Leaves - 8 cups (it should not be tender)
Red Chilly  - 20
Urad dal - 1/4 cup
Hing - 1 small piece
Tamrind - 1 lemon size
Salt to taste
Gingely Oil - 6 tbsp

Method:
In a shallow pan, add the curry leaves and fry it dry till it becomes crisp. Remove and spread in a plate to cool down. Fry tamrind in the same dry pan


Add the oil, fry the hing in it. Add Urad dal and red chilly and fry it well till golden brown.

Grind it in mixie along with salt and tamrind. When the dal and other items becomes coarse in consistency, add the curry leaves and grind it to become a fine powder.

Note: Add this to hot rice along with ghee. This makes a great dish for parties and functions too.

Recipe for Hot and Sour Paste

Ingredients:
Tamrind Paste - 5 to 6 spoons (better thick paste)
Red chilly - 20 (more if you want it more spicy)
Salt - 1 tsp
Cumin Seeds - 1 tsp
Mustard Seeds - 1/2 tsp
Oil - 1 tbsp

Method:
Grind salt, cumin seeds dry and keep aside. Grind the tamrind and chillies together and to it add the powder and grind again to make everything blend finely.

Use this paste to make sambar or rasam in a hurry
