Tomato Sauce - Method 2

This tomato sauce is quite healthy as it is prepared with olive oil.

Ingredients:
Olive Oil - 2 tbsp
Onion - 1
Garlic - 2 cloves
Carrot - 1 medium sized
Celery (or coriander leaves) - 1/2 cup chopped
Tomato - 2 kgs (1 kg of Banglore vareity and 1 kg of the country vareity)
Basil leaves - finely chopped 1 tbsp
Salt to taste

Method:
Chop onion to big strips, mince garlic finely, cut tomatoes to smaller pieces. Chop the carrots finely. 

Heat oil in a large shallow pan, add onions, garlic pods, carrots and celery and saute well. Add the tomato pieces and reduce the flame. Cook for about 30 mins covered mashing and stirring every few mins. Once the tomato is cooked, remove from heat and let it cool and blend the mixture to a smooth paste. 

This can be freezed in ice cubes and whenever needed can be heated. Can be had with pasta or even chappatti or idlies.
