Tomato Burfi an easy to make sweet

Simple and Easy sweet to make with Tomatoes. Especially when the price is low, mom used to make Tomato Jam. Wanted to try Tomato Burfi so made this simple and easy one. Altered the recipe from Tarla Dalal which called for corn flour. I did not want to use corn flour and here it is. This is just a trial. 

Tomatoes - 1/2 kg
Sugar - 1/2 kg (can add a little more if needed)
Cardamom Powder - 1/2 tsp
Ghee - 1/2 cup
Cashew nuts - 12 to 15
Water - 1/4 cup

Make thick tomato puree without adding water. Strain the seeds if it is not ground using juicer. Add 1/4 cup of water to a hard bottom pan and add sugar. When all the sugar dissolves, strain the dirt that floats on the top. Wash the pan and add the sugar water and bring it to one string consistency. (It should form a one string if tested between 2 fingers). Mix cardamom powder to tomato puree and add it slowly to the pan and mix well. Keep stirring till it forms a thick paste. Cut 8 cashewnuts into small pieces and add it to the pan and mix again.  Add 1/4 cup ghee and mix well from bottom to top. Add the remaining ghee slowly and keep stirring. When the ghee starts coming out remove from flame and pour it in a greased plate. When it is warm cut into desired shapes. Decorate with cashew nut pieces.
