Sweet Potato in Jaggery Syrup

Sweet Potato is one root vegetable that is very sweet and kids avoid it when curry is made. But when it is added to jaggery syrup they simply love it and ask for more. It is a very easy dish to make and can be had on Vrat days too. It makes a filling dish too. 

Sweet Potato - 1/2 kg
Jaggery - 1 cup
Water - 1 1/2 cup
Cardamom powder - 1tsp

Peel the sweet potatoes and cut into big pieces. Cook the pieces in a shallow pan in 1 cup of water. In the mean time mix jaggery to 1/2 cup of water and bring it to boil. When the sweet potato pieces are half cooked add it to the jaggery water and cook till they become soft and tender. Add the cardomom powder and close the lid. 

The kids will love both the cooked sweet potato pieces and also the jaggery syrup.
