This is one mixed rice, that is very easy to make during festivals, especially during Varalakshmi Viratham or Vinayaka Chaturthi as Thenga Pooranam is made for Kozhukattais. Ingredients: Rice - 1 cup Thengai Pooranam - 1/2 cup Ghee - 4 tbsp Cashew Nuts - 12 nos Method: Pressure cook rice and mash it well with 2 tbsp of ghee. Mix in the thengai pooranam and mix thoroughly. Break cashewnuts into pieces and fry in the remaining ghee and add it to the rice. Note: Increase or decrease the quantity of thengai pooranam according to one's taste |
