Sundaikkai Thokku

Sundaikkai fresh - 1 cup
Fenugreek seeds - 1/2 tsp
Urad Dal - 2 tbsp
Bengal Gram - 2 tbsp
Asafodeita - 1 tsp
Red Chillies - 12 nos
Tamarind - one lemon - sized ball 
Jaggery powder - 2 tbsp
Turmeric Powder - 1 tsp
Salt to taste
Gingely Oil - 1/4 cup

Fry Urad Dal, Bengal Gram dal, methi seeds and asafodeita in 1 tsp of oil. Powder them finely and keep aside. Fry the red chillies separately with one spoon of oil and fry that too to a fine powder. 

Slit Sundaikkai into two (donot cut it into two), Put it in boiling water mixed with a pinch of salt. Bring it to a boil and close the vessel with a lid and set aside. Grind the boiled sundaikkai along with tamarind paste, jaggery, turmeric powder and chilli powder and grind it to a fine paste.

In a hard bottom pan add 3 to 4 tbsp of gingely oil and when hot add the ground paste and keep sauteing till the mixture turns thick and the oil starts oozing out. Add the salt to it and mix well.  Add the ground powder and the remaining oil and keep stirring. Cook for a few more mins till the oil oozes out. 

This is a great side dish for the first day dosa or chappati or even freshly made curd rice. Can also be mixed with hot rice too
