Tomato is something which has become an essential part of daily cooking. Use the country vareity of tomato to do this. This can be used as a side dish for idly, dosa, poori or chappati. Ingredients: Tomato - 10 to 12 nos Onion - 4 nos big Chilly Powder - 2 tsp or Red Chilly 4 to 6 nos Curry leaves - 1/4 cup Hing - 1 tsp Salt to taste Gingely Oil - 1/4 cup Method: Wash tomatoes and cut them finely. Peel and chop onions in large pieces. Heat half of the oil and add mustard seeds and let it splutter. Add curry leaves and red chillies, saute for a while and then add the onions. Saute till the onions turn glassy and then add the cut tomatoes. (If you are adding chilly powder add it after the tomatoes are half cooked). Add salt and saute well. When it is cooked well add the remaining oil and cook in low flame. |
