Potato Salad

An easy to make salad which can be had with rice, chappati or roti and also as a dish for dieters. 

Ingredients:
Potatoes - 2 large
Green Chillies - 1 or 2 depending upon the size
Salt - 1 tsp
Curd - 2 cups
Curry Leaves - 1/4 cup
Oil - 1 tbsp
Mustard Seeds - 1/2 tsp
Broken urad Dal - 1 tsp
Asafodeita - 1/2 tsp
Coriander Leaves - 1/4 cup
Mint Leaves - 1/4 cup

Method:
Pressure cook potatoes, peel and mash it to a finely. Chop coriander leaves and mint leaves finely. Chop green chillies very finely. Mix green chillies, coriander leaves, mint leaves, asafodeita and salt to patato and mix well. To this add 1 cup of curd and mix thoroughly. (Add the remaining cup of curd before serving). Heat oil in a tadka laddle and add mustard seeds. When it splutters add it to the potato. Mix well.
