One of the dishes that is made quite often in Kerala homes is Olan. Made using Pumpkin or Yellow Pumpkin or using both. Black eyed beans either the while ones or the black ones (karamani) is also used in typical Olan. I have also seen thin long pieces of carrot or beans also in some people's cooking. But my preference is just plain yellow pumpkin. The sweetness it gives out when it is blended with green chilly and coconut is quite enticing. I have not followed traditional method of making this dish. But have made it the OPOS way. Easy to make and tastes delicious too. Ingredients: Yellow Pumpkin - 1/2 kg Grated Coconut - 1/2 cup Green Chillies - 4 nos Curry leaves - a few Salt to taste Curd - 1 cup Moong dal - 1/4 cup (optional) For seasoning: Oil - 1tsp Mustard - 1/2 tsp Broken Urad dal - 2 tsp Method: Chop the pumpkin into cubes. Grind coconut, green chillies and curry leaves to a fine paste. Add pumpkin cubes, ground paste, moong dal and salt to a 3 ltr pressure cooker. Mix and let it cook for 3 whistles. Switch off let it cool, add curd and seasoning. Tastes yumm as it is. Can be had with rice and rotis. |
