Mango Curry Sri Lankan Style method - 1

Mango, especially raw mango is my most favourite and I try any kind of dish using it. Recently met one of my friend, who is from Srilanka, they make a different kind of mango dish, which they call it mango curry. She said it could be made in two methods, one need to be finished off the same day the other can be stored for a few days. Sharing both her recipes, and I am yet to try them, though I have tasted both. I am sure, it is definitely going to be liked by all in the family. 

Mango - 6 no. medium sized
Ghee (this enhances the taste to the maximum) - 1 tbsp
Oil - 2 tbsp
Green Chilly - 4 nos
Curry Leaves - a few
Turmeric Leaves - 1/2 tsp
Hing - 1/2 tsp
Cumin powder - 1/2 tsp
Coriander powder - 1 tsp
Salt to taste
Mustard seeds - 1 tsp

Cut the mango into small pieces. 

Heat ghee in a shallow bottom pan, add mustard seeds to it and let it splutter. Add hing, turmeric powder and mix well. Reduce the flame add mango pieces and saute well. Add 1 tbsp of oil, curry leaves, cumin powder, coriander powder and mix well with mango. Add 1 cup of water and mix bring it to a boil in a medium flame. 

When the water is fully absorbed, add salt and mix well. Sprinkle 1/4 cup of water and cover the pan after reducing the flame. 

When the water is fully absorbed and becomes thick, remove from flame and add the remaining oil and mix. Let it cool. This can be mixed with rice, or can be had with dosas, chappatis or as a pickle with curd rice too.
