Microwave Kaju Kathli

Another favourite sweet of the house hold is Kaju Kathlee or Kaju Kathli. A costly one ofcourse so its definitely a delicacy. But its not bad to indulge once or twice in a year in larger quantities and if it is home made the better. So this year Diwali, I made a trial version of Kaju Kathli in microwave which ofcourse turned out not the exact way it turns out when I make in traditional method. May be due to the extra ingredient I added too could be the reason. 

Cashew Nuts - 1 cup
Sugar - 1 cup
Ghee - 2 tbsp
Water -  2 tbsp
Milk - 1/4 cup

Powder the cashew nuts. Ensure it is not powdered fine as it will start oozing out oil. In a microwave safe flat vessel, add powdered cashew nuts, sugar and water and mix well. Keep in microwave high for 3 mins. Remove  and mix well. Add 1 tbsp of ghee and milk to the vessel and mix well. Keep for 10 mins stirring for every 2 or 3 mins. The consistency should be that of chappathi dough and leave the sides of the vessel. If the consistency is not acquired, then keep for a few more minutes. Remove from the oven, let it cool down a bit add the remaining ghee and knead it well. Flatten it on a greased plate and even it up using a flat cup. Cut to desired shape and transfer to an air tight container. 

Though I got the dough consistency right, I was not able to level it up to make pieces so I made balls out of it and flattened them. Kids said, shape does not matter only the taste matters.
