This is one recipe which is easy to make and is also good for postnatal period. Those who are alone without any one to take care can make this easily. Ingredients: Rice - 2 cups Small Onions (Shallots) - 8 to 12 numbers Garlic pods - 1 cup or from 2 big garlic Ginger - 1/4 inch piece Black pepper powder - 1/2 tsp Cumin seeds - 1 tsp Ghee - 4 tbsp Gingely Oil - 1 tsp Red Chilly - 2 nos Curry leaves - a few Method: Fry the rice in 2 tbsp of ghee and add pressure cook it the normal way by adding 1/2 tsp of gingely oil to it. Pressure cook it normally and when warm spread it on a wide pan or plate and add the remaining half of the gingely oil and mix with the back of the laddle without crushing the grains. While pressure cooking the rice cut the onions, garlic and ginger into fine pieces. Heat ghee in a wide pan add mustard seeds and when it splutters add the cumin seeds and fry a little. Add the red chillies and curry leaves and saute for a while. Add the cut onions, garlic and ginger pieces and fry them in low flame till they become soft and tender. Add the pepper powder, cumin powder and salt to taste and mix it with the cooked rice to it. Turn off heat once the rice is added. Serve with roasted pappad |
