Eggless Marble Cake in Microwave

Marble cake whats so speciality about it. It is nothing but a combination of two or three flavours. But it is done maximum with 2 flavours. One is normally a white coloured flavour either plain or Vannila mixed. The other is chocolate or strawberry or mango or Orange. After lots of thoughts I decided to try this out for my son's 9th birthday. Ofcourse like my other two Baking experiments of Vannila Sponge Cake and Eggless Mango Cake, this one is also Eggless and is baked in microwave. On a search in the net, I find the recipe in Jeyashri's kitchen. As usual, I have made some changes and alterations according to the taste of the family. 

All Purpose Flour - 1 1/2 cup
Condensed Milk - 3 tbsp
Baking Soda - 1/2 tsp
Baking Powder - 2 tsp
Cocoa Powder - 2 tbsp
Milk - 3/4 cup
Powdered Sugar - 3/4 cup
Hot water - 2 tbsp
Butter - 1 big lemon size/ 35 gms/ 2 1/2 tbsp
Cashew Nuts - 12 nos

In a large mixing bowl, add flour, baking soda and baking powder and mix well with the help of a fork. (It can also be seived together to make even mix). 

In a separate bowl add butter and powdered sugar and whisk well so that it turns fluffy. Add condensed milk to it and mix well. Add milk to it slowly and beat well again. 

In a small cup add cocoa powder and hot water and mix well without lumps. 

Mix the milk mixture into the flour and mix it well ensuring that no lumps are formed. Divide the mixture into two. Add the cocoa mixture to one part and mix again so that the entire flour mix is well mixed with cocoa. 

In the baking bowl, add 1/2 of the white mixture and on top of it from the centre pour 1/2 of the cocoa mixture. Using a fork or a skewer stick make swirls on the mixture. Add the white mix again and then pour the remaining cocoa mix from the centre. Now again make swirls. 

Break the cashews into half or or more pieces. Soak it in warm water for 5 mins. Now place them on top of the batter so that it will stick out once the baking is over. (Tips by Mamta)

Without shaking it much place the baking bowl in the centre of the microwave and bake it for 10 mix. Pierce the cake with a toothpick to ensure whether it is baked or not. If not keep it again for another 2 mins. 

Once done let it set for a few mins in the oven. After the second sound, remove from oven and let it cool. Cut into pieces once it is cool to avoid crumbles.

Enjoy it with Masala Tea. 

Note: The original recipe calls for orange zest and also oil instead of butter. Orange zest can be added to the cocoa mix.
