Eggless Mango Cake

With a family full of Chocolate cake haters and chocolate ice cream haters, when I wanted to make marble cake with the recipe from here, I had a big no. But as I had huge quantities of mango puree, I adapted the recipe to make just a simple mango cake. Turned out yummy yumm and it was gobbled down by every one with great interest and with demand to make a bigger cake soon. 

All purpose flour - 2 cups   
Baking powder - 1.5 tsp
Baking soda - 1/2 tsp
Salt - 1/4 tsp
Powdered Sugar - 3/4th cup
Butter - (liquidify it ) - 1/3 cup
Mango Puree - 2 cups
Milk - 3/4 cup (Add a little more if batter is thick)

In a mixing bowl add sugar and mango puree and mix well. Add the milk slowly and ensure both mango and milk makes a fine mixture. Sift the flour, baking powder and soda and salt together and add it to the mango puree mixture. (If the batter is too thick add little more milk to it). Ensure the batter is smooth enough beat the batter with a hand held beater to ensure no lumps smooth paste. 

Grease a Microwave baking pan and pour the batter. Ensure the batter is not too thick and is of pouring consistency. If it is thick add more milk little by little. 

Microwave high for 20 mins with breaks in between. (The baking time depends upon the make and model of the microwave. Pls check the manual before you bake this cake).

When done check using a tooth pick. If it comes out non sticky, let it set for a few mins turn upside down on a serving plate. 

You can add nuts or chocolate chips to the batter.
Decorate it with fresh mango slices without the skin.
