Any dish made using corn is a great hit in our family. And Sweet Corn is liked even more. A mixture of corn, potato and cheese is a great hit.

Sweet Corn - 1/2 cup (I used frozen ones)
Corn Flour - 1/4 cup
Potato - 2 nos large or 4 nos medium
Green Chillies - 2 nos
Cheese cubes - 2 nos
Butter - 2 tbsp
salt to taste
Bread Crumbs - 1/2 cup

Boil peel and mash the potatoes very finely. Boil the sweet corn with 1/2 tsp salt and drain the excess water and let it cool. Grate the cheese cubes. Grate green chillies finely. In a shallow bowl, mix corn flour with water to a thick paste consistency. Mix grated cheese, boiled corn, grated green chilly and salt and set aside. In a plate spread the bread crumbs and keep them ready.

Make small balls out of potatoes, make a pit in the middle. Put a tbsp of the corn mixture into the pit. Close it and make it to a ball. (You can also shape it to a cylinder or flatten it to a square or heart shape)

Roll the balls in the corn flour paste and also in the bread crumbs. Arrange them in a plate and freeze it for about 20 to 30 mins. (This will help in the settling). Remove from freezer and fry them immediatly, if not it will become loose. Fry till it turns brown in colour.

Drain and serve with green chutney and tomato ketchup. Though plain nuggets itself is very tasty.
