Carrot Dip or Spread

Carrots - 8 nos
Garlic - 4 pods
Lemon Juice - 2 tsp
Oil - 1 tbsp
Sesame seeds - 1 tbsp
Coriander leaves - finely chopped 1/2 cup

Peel and dice the carrots into small pieces and steam them till tender. Fry sesame seeds till they pop.  Add sesame seeds, garlic, coriander leaves and cooked carrot to a blender and blend it to a fine paste. Transfer to an air tight container and add oil and lemon juice and mix well. Store it in an airtight container. Can be used as spread on bread and also as side dish for Chappatis.
