Basundi - A milk sweet

One of the most favourite sweets of our house hold is Basundi. Though the procedure to make it takes time, the end result is yummy and it gets over quickly too. One need lot of patience too to make it. 

Milk - 4 litres   
Sugar - 150 gms
Cardamom powder - 1/2 tsp
Cashew Nuts - 12 nos
Badam - 12 nos

In a hard bottom shallow pan, heat the milk and bring it to boil. When it starts forming fat on top, reduce the flame and move the fat to the sides of the pan. Keep boiling the milk till it reduces to 1/4th. All the time keep moving the fat to the sides of the pan. When it is reduced to 1/4th add sugar, cardomom powder. Break cashew nuts into small pieces and make the almonds to flakes and add it to the pan. When the sugar is added the milk gets liquidified a bit. So it needs to be reduced further. Ensure that no fat settles at the bottom of the pan. 

Serve hot or chilled.
